METHOD:

INGREDIENTS:

  • 1 3/4 cups Lion Self-Raising Flour, sifted

  • 1 cup dates, chopped

  • 1/2 cup brown sugar, lightly packed

  • 60g butter, or margarine, sliced

  • 2 ripe bananas, mashed

  • 1 cup boiling water

  • 1 teaspoon bicarbonate of soda

  • 2 teaspoons vanilla essence

  1. Preheat oven to 180˚C.

  2. Put chopped dates, sugar and banana in a bowl and add sliced butter. Pour in boiling water stirring until butter has melted completely.

  3. Add in sifted flour, then bicarbonate soda, mixing well. Add vanilla.

  4. Bake in a well-greased loaf tin in the oven for 45 - 50 minutes.
