Date Loaf
INGREDIENTS:

1 3/4 cups Lion Self-Raising Flour, sifted

1 cup dates, chopped

1/2 cup brown sugar, lightly packed

60g butter, or margarine, sliced

2 ripe bananas, mashed
-
1 cup boiling water
-
1 teaspoon bicarbonate of soda

2 teaspoons vanilla essence
METHOD:

Preheat oven to 180˚C.

Put chopped dates, sugar and banana in a bowl and add sliced butter. Pour in boiling water stirring until butter has melted completely.

Add in sifted flour, then bicarbonate soda, mixing well. Add vanilla.

Bake in a well-greased loaf tin in the oven for 45 - 50 minutes.
